Vegan/Raw culinary programs?

I’ve been searching for vegan/vegetarian culinary programs and the Natural Gourmet in NY is one of two (the other being the Natural Epicurean) that I’ve found that specialize in plant based foods. However, I did notice that both institutes do use dairy and poultry (and even organic red meat). While I’m sure both offer great techniques and well-rounded information, I am very much interested in vegan, organic, raw. Outside of a four week program at 105 Degrees in Oklahoma City, have not found any other culinary institute that specializes in what I’m seeking.

Anybody happen to have any suggestions or insight in my pursuit of art in vegan/raw culinary? Or are the Natural Gourmet & the Natural Epicurean as close as it gets? I really struggle with the thought of paying good money to learn how to perfect baking (or cooking) with sugar and eggs, etc in a commercial kitchen. But maybe that’s the compromise to get the training and exposure I’m seeking.

Any thoughts you may have is greatly appreciated.

I am wanting to grind our own beef, chicken, etc. I don’t have a food processor, but I do have a Ninja Prep. Could I use that to grind the meat? I do not want to invest a lot of money into this adventure. Also, any tips, methods, recipes, ratios, etc are welcome and much appreciated. Thanks in advance!!

I’ planning to buy a food processor , but don’t want to waste my money on something that wont last like the as seen on TV adds where they seem to work great at first and then fall apart according to the reviews I’ve seen.
I’m planning to spend no more than 60.00, the processor needs to be powerful, sturdy and have at least a 6 cup capacity.
Any suggestions?

How do you grind your own meats?

I’m thinking about grinding our own meats (beef, chicken, pork, etc). What suggestions do you have for someone just starting out. I don’t want to invest a lot of money in this. I have a Ninja Master Prep, but not a traditional food processor. What cuts of beef would you suggest using? What ratios of cuts would you blend together for the beef? Any suggestions or ideas would be much appreciated. Thanks in advance!!

Magic Bullet Food Processor…?

My son eats pureed foods and I’ve tried the Cuisinart Mini Food Prep Prossesor…. BOOOO!!! It smelled like the motor was going to burn up… And it wasn’t even working that hard! And it left big chuncks of food. I’m using a blender now… and it’s such a pain to get all of the food out from around and under the blades! It takes so long just to blend up his foods. I was wondering if the Magic Bullet would be good for the use I need it for? Or maybe a different food processor? I was thinking of saving up some money and buying one of the good ones… Like the 0-200 ones… I’m just tired of dealing with the blender…
